The Dama manifesto
Casa Dama was born in central Turin, on Via dei Mille, from one simple, stubborn idea: treat meat like a queen. We choose it cut by cut, marinate it patiently and hand it over to the fire of UGO, our handcrafted charcoal oven, where charcoal does what no flat-top ever will.
Our ace up the sleeve
No gas, no electric elements: real natural charcoal burns inside UGO. The embers do the cooking, with their scent of smoke and wood.
UGO is built by hand in the Universo Grill workshop in Tuscany: a cooking chamber shut like a treasure chest, with a separate firebox that keeps the embers alive without ever disturbing the food.
The Maillard reaction builds the crust of the grill; the juices stay locked in the core. Every cut comes out charred outside and juicy inside.

Casa Dama’s dining room is small on purpose: about twenty seats, low lights, and the grill working in plain sight. It’s the place for an intimate dinner, to speak softly and eat well — with your dog at your feet, if you like: they’re welcome here.
